Kitchen board · Week of Oct 12
The Monday
field report
Eleven farms, one oyster bed, and what the walk-in knows by nine. The week's menu is written from this board. Read it before you book and you will know what dinner tastes like.
This week
What is ready, thin, and done
Apples, quince Ready
Empire and Stayman for the dessert, quince for the mostarda. Last cider pressing of the season lands Friday.
Duck, whole Ready
Twelve birds, dry-aging in the cellar since Thursday. The long table gets four of them on the 22nd.
Trout Thin
Cold snap slowed the ponds. The a la carte trout becomes a dish for two nights only, then goes until the water warms.
Cultured butter, smoked cream Ready
The herd moved to winter pasture; butter is nuttier this week. Smoked cream continues for the apple.
Oysters Ready
Best week of the autumn. Cold water, firm meats, high salinity. Order them at the bar before dinner.
Tomatoes Done
The last case arrived Saturday and did not survive the weekend. Parsnips take the second-movement slot from Wednesday.
The system
Why this is public
A menu is a promise about a supply chain guests never see. Publishing the chain is the cheapest trust there is. The letter carries this board in plain language on the first Monday of every month; the essays explain the rest. Read how the report works.
